Green Onion, Black Pepper & Sour Cream Biscuits 

Here’s a twist to a morning classic that will have ’em coming back for more. With a touch of peppery spice, the savory green onion wrapped in a moist, sour cream and butter-baked biscuit offers a mouthwatering alternative to your traditional biscuit. Flaky and rising as high as the Cascade Mountains, they’re a perfect pairing for the hearty egg breakfast of your choice. Or, they’re a delight just to have on their own.

Before you Start

Preheat  oven to 425 degrees F

Prepare  line a rimmed baking sheet with parchment paper

Oven  place a rack in middle of oven

Baking Time  18-20 minutes

Serves 8

Ingredients

  • 2 tsp salt, or 1 ½ tsp sea salt
  • 1 ¾ tsp baking powder
  • ½ tsp baking soda
  • 1 ¼ tsp sugar
  • 2 ½ cup (313 g) all-purpose flour
  • 10 Tbsp chilled unsalted butter, cut into 1/2” pieces
    • *We like to cube this as small as 1/4″ cubes for an even finer distribution if you’re up for it!
  • 2 Tbsp melted butter to brush on top of biscuits before baking
  • 8 scallions, thinly sliced crosswise (not on a diagonal)
  • 1 ¼ cup sour cream
    • plus more for serving

Directions

  1. Place a rack in middle of oven; preheat to 425 degrees. Line a rimmed baking sheet with parchment paper.
  2. Whisk salt, pepper, baking powder, baking soda, sugar, and 2 1/2 cup flour in a large bowl to combine.
    1. Add chilled, cubed butter and toss to coat.
    2. Using your hands, work butter into dry ingredients until there are lots of flat pieces and pea-size bits.
    3. Add scallions and toss to evenly distribute.
  3. Create a well in the center of mixture and add sour cream into the center.
    1. Using a fork and working in circles, mix until large shaggy clumps form.
  4. Turn dough out onto a lightly floured surface
    1. Knead once or twice until it comes together (*flour your hands if needed).
    2. Fold dough in half using a bench scraper and gently flatten with the palm of your hand.
    3. Repeat this kneading process five more times, folding the dough in on itself each time.
  5. Using your hands, flatten the dough to about 1 inch thick
    1. Cut out biscuits with a 2¾-inch biscuit cutter, pressing straight down rather than twisting the cutter.
      1. *Dip the cutter in flour before each use to keep the dough from sticking to it.
      2. Cut as many biscuits as possible.
  6. Transfer biscuits to parchment-lined baking sheet.
  7. Brush tops gently with melted butter.
  8. Bake biscuits until golden brown, 18-20 minutes.
