Enjoy a Peachy-Keen Start to Your Day

Peachy keen is how we feel after Bernadette’s peach muffins with streusel topping.

This recipe comes from Theresa’s sister, Bernadette. A gifted artist with pencil and paint brush, she pours the same creativity into baking with delicious flare!

Moist cakey muffin cradles juicy bites of peach while cinnamon and brown sugar warm it up in a spicy sweet streusel topping. Though we love making this recipe with fresh Hood River Fruit Loop peaches found here in the Gorge, frozen peaches also work nicely making these muffins year-round favorites.

Bernadette’s Peach Muffins with Streusel Topping

Before You Start

Preheat Oven to 350 degrees F

Prepare  Line a 15-cup muffin tin with paper cups, lightly sprayed with canola cooking spray

Bake Time  20 – 23 minutes


Dry Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 1 Tbsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 2 large eggs
  • 1 cup milk
  • ½ cup canola oil
  • 1 tsp vanilla
  • ½ tsp almond extract
  • 2 cups fresh or frozen peaches, chopped

Streusel Ingredients

  • 1/3 cup packed brown sugar
  • 1/4 cup flour
  • ½ tsp ground cinnamon
  • 2 Tbsp butter (shredded)


  1. In a large bowl, combine flour, sugar, baking powder and salt. Set aside.
  2. In a medium bowl, beat eggs and add milk, canola oil, vanilla and almond extracts.
    1. Add to the flour mixture. Gently stir until JUST blended.
    2. Fold in peaches and spoon equal amounts into each of the muffin sections.
  3. Combine streusel ingredients in a small bowl.
    1. Sprinkle evenly over muffins.
  4. Bake 20 minutes, until toothpick comes out clean.
