Carrot Pineapple Muffins
Not many think of tropical fruit and root vegetable as a winning combo. Until they try this muffin, that is. Moist, flavorful and sporting just a touch of spice, this recipe brings carrots and pineapple to the table in the most agreeable way.
A healthy dollop of cream cheese frosting offers the perfect texture for such light and tasty treat while golden raisins add small bursts of flavor. Guests love this following a hearty breakfast of sourdough bake. Let us know how you serve it!
Before You Start
Oven Preheat oven to 375 degrees F
Prep Lightly spray muffin tin with non-stick spray
Bake 23 – 25 minutes
Makes 12
Ingredients
Dry ingredients
- 1 ½ C Sifted Flour
- 1 C Sugar
- ½ tsp Salt
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- ¼ tsp nutmeg
- 1/8 tsp cloves
Wet ingredients
- 2/3 C Canola Oil
- 2 Eggs
- 1 tsp Vanilla
- 1 C drained crushed Pineapple
- 1 C grated Carrots
- ½ C golden raisins
Frosting ingredients
- 1/2 C Cream Cheese
- 1 tsp Vanilla
- 1/8 C softened Butter
- 2 C Powdered Sugar
Directions
- Mix together dry ingredients.
- In separate bowl, whip egg, oil and vanilla together.
- Stir dry ingredients until just blended.
- Fold in the pineapple, carrots and raisins.
- Fill muffin tins ¾ full.
- Bake 23 – 25 minutes until toothpick comes out clean.
- Cool completely before frosting.
