Raspberry Lemon Pudding Cake

We know what you’re thinking…Cake for breakfast? To which we say, …Mais, oui! Especially when it’s this raspberry lemon pudding cake.

Not your typical coffee cake, this recipe brings sweetness to breakfast in a refreshing way. We serve it along side our savory egg dishes to round out the morning meal with a special touch, but you can also have it with your afternoon coffee.

Fresh raspberries cuddle up in a lightly sweet, zesty treat for a burst of delight in every bite. Of course now you’re asking… Why all the rhymes and French speaking?

Before You Start

Preheat  oven to 350 degrees F

Prep Time 15 minutes

Cook Time  35 minutes

Servings  8

Prepare

  • 8 greased ramekins
  • set aside large baking pan deep enough to hold 8 ramekins with hot water

Ingredients

  • 2 eggs, separated
  • 1/2 cup sugar
  • 3 Tbsp King Arthur flour
  • 1 cup milk (whole or 2%)
  • 2 Tbsp butter, melted
  • 3 Tbsp fresh lemon juice
  • zest of one lemon
  • 1/8 tsp cream of tartar
  • 1 ½ cup fresh raspberries

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, whisk together egg yolks and sugar until thick and creamy.
  3. Once batter is creamy, whisk in flour, milk, butter, lemon juice and lemon peel.
  4. In a separate bowl beat egg whites and cream of tartar until stiff.
  5. Take 1/3 of egg whites and stir into the creamy batter.
  6. Then lightly fold the remaining egg whites into batter.
  7. Fold in raspberries, or place them on the batter once it’s spooned into ramekins*.
    1. *Spoon batter into greased ramekins.
  8. Place ramekins into large baking pan and pour enough hot water into baking pan to come 1 inch up the sides of ramekins. Careful not to get water in the batter!
  9. Bake at 350 degrees for 30-35 minutes.
  10. Remove ramekins from water; let cool at least 30 minutes.

We like to add a few more berries on top and dust with powdered sugar.
