Banana Nut Bread

Everyone has a family recipe for banana nut bread, but we ask, “does yours include yogurt?” If not, here’s one to try for a delicious and moist breakfast delight! This is always a favorite at breakfast here at the Cabins. So much so, we also serve it mid-day for the afternoon treat.

Before You Start

Oven Preheat to 350º

Bake 50 – 60 minutes

Prepare Greased loaf pan

Ingredients

Wet:

  • ¼ C butter softened
  • 1 C brown sugar
  • 2 eggs room temperature, slightly beaten
  • 1 C yogurt
  • 1 C ripe bananas smashed (2)

Dry:

  • 2 ¼ C flour sifted
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 C chopped walnuts or pecans

Directions

In a large bowl, cream the butter and brown sugar together then add eggs and blend well. Gently stir in yogurt and smashed bananas.

In a medium bowl, mix together dry ingredients including nuts. Stir gently into wet ingredients until just incorporated, but do not over mix (you don’t want the gluten activated).

Spoon batter into loaf pan. If using a smaller loaf pan, only fill it 2/3’s full and make muffins with the extra batter!  Muffins only take 20 – 22 minutes to bake.
